Crispy warthog ribs
It is important to slow cook the Warthog ribs before grilling, to help make it tender.
slow cooked, – rub or coat the rib with a paste of ginger, lemon rind, chilli, garlic , soy sauce and olive oil – set aside to marinade for 1 hour. Take out of marinade and set remaining marinade aside. Baste with oil and butter and marinade whilst grilling over the fire or grill. Add salt & pepper before serving. Do not overcook.
